Deliteful Cup Cakes

Description: The Koffee Kup has been one of Stoughton's favorite café and bakery for as long as I can remember! Famous for their coffee cakes, apple torts?, and pies, the Koffee Kup owners Trish and Kendall Gulseth designed this truly deliteful dessert!

Ingredients:
1 ½ cups Sugar
½ cup Soft Margarine Or Butter
2 Eggs1 ½ tsp Vanilla
2 ¾ cups All Purpose Flour
2 ½ tsp Baking Powder
1 tsp Salt
1 ¼ cups Milk
1 box Caramel Delite Cookies
White Frosting, (optional)
Coconut, (optional)
Directions:
Mix sugar, margarine, eggs and vanilla until fluffy. Beat on high for 5 minutes.
Combine Flour, baking powder and salt.
Slowly add Flour mixture and milk to Sugar mixture
Mix on low speed
Pour into cup
cake cups the place a cookie on top
Bake in oven 30 min or until done
Add Frosting when cooled if desired because they taste delightful either way!

Caramel deLites/Peanut Butter Patties Angel Food Cake Roll-Ups




Description: Local Baker Gina Krull made these fabulous angel food cake roll-ups that were gone pretty quickly.

Ingredients:
1 box Angel Food Cake Mix
2 packages Vanilla Instant Pudding
½ cup Powdered Sugar
2 cups 2% Milk
3-8 ounces Cool Whip
1 box Peanut Butter Patties
1 box Caramel Delite Cookies
Caramel Ice Cream Topping
Hot Fudge Ice Cream Topping
Directions:Preheat oven 365℉.
Prepare cake mix according to package directions. Divide evenly between 2 12x18 parchment lined cookie sheets. Back 12-15 minutes at 365℉. Cool.

Stir together 1 pkg. vanilla pudding, ¼ cup powdered sugar. Add 1 cup milk. Mix well.
Let pudding mixture set well in refrigerator.
Then, add 8 oz. cool whip. Mix.
Coarsely chop ⅔ box of Peanut Butter Patties.

Assemble:
Remove parch
ment from cake.
Cut sheet of Angel Food cake in half.
Spread pudding mixture on each half, not quite to outer edges.
Spoon Hot Fudge sauce into zip lock bag and cut very small corner off to drizzle some chocolate on top pudding mixture.
Sprinkle with cookie crumbs and press down lightly.
Roll up into logs.
Spread plain cool whip on outside.


Decorate with drizzle and whole cookies.

Repeat pudding procedure.
Assemble the same way with other cake only crush up ⅔ box Caramel deLites.
Use Caramel ice cream topping on inside of roll and on top.

Caramel deLite Pudding Bars

Description: Carrie at Stoughton's Sugar & Spice local Restaurant masterminded these delectable pudding bars. Yes, they are as delicious as they look.

Ingredients:
Crust
3 boxes Caramel Delites, crushedFilling
2 boxes Butterscotch Instant Pudding
2 cups Ice Cream
1 cup Cream Cheese
1 cup Milk
Whipped Cream
Directions:
CRUST
Press Caramel deLites into 9x13in pan for crust.

FILLING
Mix butterscotch pudding, ice cream, cream cheese, and milk.
Let set up in pan, then top with whip cream. Sprinkle top with a little reserved crust.

Enjoy!

Caramel deLite Macaroons

Description: One of my personal favorites! Caramel deLites and macaroons should have gotten married sooner! Be sure to try this recipe! These are great as snacks and desserts at parties or family gatherings. Delicious and fun to share!

Ingredients:
1 ½ box Caramel Delite Cookies
cup Butter, softened
3 ounces Cream Cheese, softened
¾ cup Sugar
1 Egg Yolk
2 tsp Almond Extract
2 tsp Orange Juice
1 ¼ cups All Purpose Flour
2 tsp Baking Powder¼ tsp Salt
14 ounces Package Flacked Cocunut, 5 (cups)


Directions:
Cream butter, cream cheese and sugar until light and fluffy. Add egg yolk, almond extract, and orange juice; beat well. Combine flour, baking powder, and salt; gradually add to creamed mixture. Stir in 3 cups of the coconut. Cover tightly and chill for 2 hours or until firm enough to handle.


Preheat oven to 350℉. Line cookie sheet with parchment
paper. Divide chilled dough into 14 sections. Each section will enclose one cookie. Completely wrap e
ach Caramel Delights with chilled cookie dough; roll in remaining coconut. Bake for 20 minutes or until lightly browned.

Cool and Enjoy!

Caramel deLite Kiss Brownies

Description: These Caramel deLite Kiss Brownies are the Recipe that started it all! This recipe was so delicious, it gave me the idea for my Gold Award project. I hope you enjoy them as much as I did.

Ingredients:
1 box Devil's Food Cake Mix cup Evaporated Milk
¾ cup Butter, melted
Mini Choloate Kisses
¾ cup Caramels, melted
½ box Caramel Delites
Coconut

Directions:
Mix cake mix, evaporated milk, and butter. Pour half of mixture into a 9" x13" pan. Bake at 350℉ for six minutes. Sprinkle one cup Kisses on top. Spread melted caramel over Kisses. Add ½ box crushed Caramel deLites and 1 Tbsp of toasted coconut. Pour remaining cake batter on top and bake 10 minutes. Drizzle with melted Kisses and sprinkle with coconut.

Caramel deLite Goo Bars

**1st place!**





Description: Chef Brandon at Halverson's Supper Club in Stoughton, WI won the Girl Scout Cookie Recipe Challenge with these delicious Caramel deLight Goo Bars! I didn't even get to try them they were gone so quickly. Jeff Kruckenburg, the beloved restaurant manager, keeps the award on display usually with a box of Girl Scout cookies for guests.

Ingredients:
½ cup Plain Flour
½ cup Self-Rising Flour
½ cup Sweetened Coconut Flakes
½ cup Sugar
3 ½ ounces Butter, melted
1 can Sweetened Condensed Milk
2 Tbsp Golden Corn Syrup
½ cup Brown Sugar
2 ½ cups Butter, melted
4 Eggs
1 cup Sweetened Coconut
3 cookies Caramel Delite Girl Scout Cookies, crushed
Directions:
Pre-heat oven 350 F
Grease 9x13 pan, line base and sides with parchment paper
Combine sifted flours, coconut, sugar, and butter in mixing bowl.
Press mixture into bottom of prepared pan. Cook 15 min. or until lightly browned. Cool completely.

Combine condensed milk, golden corn syrup, brown sugar, and 2 ½ oz. melted butter. Pour over cooled base.

Combine eggs, coconut, and crushed cookies. Sprinkle over filling. Cook for another 20 minutes or until lightly browned. Refrigerate until cool and set. Cut into squares and serve.

Description: Fosdal Bakery has been a favorite local bakery in Stoughton for many generations! These Caramel deLite Cookie Bars are yummy and fun!

Ingredients:
Base
2 ½ cups Sugar
2 ½ cups Butter
1 ½ cups Shortening
Pinch Salt
4 Eggs
dash Vanilla
3 cups Cake Flour
3 cups Bread Flour
Caramel Topping
2 cans Sweetened Condensed Milk
1 ¼ cups Brown Sugar
1 ¼ cups Butter
¼ cup Corn Syrup
pinch Salt
dash Vanilla
1 box Caramel Delites
Directions:
Base:
Preheat oven 350℉.
Cream together well: sugar, butter, shortening, salt, eggs, vanilla. Then add flours.

Place in large rectangle pan and bake for 10-12min.

Topping:
Cook in double boiler, stir constantly. Bring to boil and continue to stir for 5 minutes. Allow to cool and spread topping on base.

Chop box of Caramel deLite cookies. Add to top of caramel bar. drizzle chocolate icing on top!

Yum, enjoy.

Caramel deLite Cheese Cake

Description: Third Place winner, Susan at the Sunprint Café knew exactly what she wanted to make when I asked her to take on the girl scout cookie challenge. This delicious Caramel deLite Cheese Cake IS as great as it sounds.

Ingredients:
Crust:
2 Tbsp Unsalted Butter, melted plus more for coating pan
1 ¼ cups Graham Cracker Crumbs
2 Tbsp Sugar
Filling:
2 8 ounces packages Cream Cheese
1 cup Sugar
3 Large Eggs
¼ tsp Salt
3 cups Sour Cream, (not light)
1 box Caramel Delite Cookies, chopped
1 can Dulce De Leche
Directions:
For the Crust:
Preheat oven to 325F. Generously butter the bottom and sides of a 9 inch spring form pan. In a bowl, combine melted butter, graham cracker crumbs, and sugar and stir until the crumbs are evenly moistened. Transfer the crumb mixture to the springform pan and press evenly onto the bottom and about 1 ½ inches up the sides of the pan. Bake until the crust dries out a little, about 10 minutes. Remove from oven and let cool on wire rack completely.

For the filling:
Turn the oven up to 350F.

Blend the cream cheese and sugar in a mixer, making sure to get out all of the lumps. Add the eggs, one at a time and blend well after each addition. Blend in the sour cream. Add ⅔ of the chopped cookies and ⅓ cup of the Dulce de Leche. Stir in by hand until just incorporated. Pour into prepared pan.

Prepare a water bath (boiling the water in a tea kettle works best). Fold a terry-cloth towel and place it in the bottom of a roasting pan, sticking out at least one inch all around the pan. Place the cake pan on the towel in the roasting pan.

Pull out middle shelf of oven slightly and place roasting pan on the shelf. Carefully pour enough boiling water in the roasting pan to come at least 1 inch up the side of the cake pan. Bake the cheesecake for 45 minutes. DO NOT OPEN THE OVEN. Turn off the oven and leave the cheesecake in for 1 hour more. The cheesecake will not look done, and a 3 inch circle in the center should still wiggle. Remove it from the oven and refrigerate overnight.

Run a knife along the edges of the springform pan to fully separate the cake from the pan and remove the spring form. Pour the remaining Dulce de Leche on top of the cake (using a squeeze bottle gives a nice design) and sprinkle with the remaining cookies.

Caramel deLite and Peanut Butter Patty Cup Cakes

Ingredients:
Cup Cakes:
1 package White Cake Mix
1 box Peanut Butter Patties, crushed
1 box Caramel Delites, crushed
Peanut Butter
Icing:
½ tub White Icing
3 Tbsp Caramel Ice Cream Topping

Directions:
Cup Cakes:
Preheat oven 340℉.
Prepare cake mix according to package. Divide in half.
Mix 1 cup coarsely chopped Peanut Butter Patties into one half cup cake mix.
Mix Caramel deLites cookies into other half of cake mix.
Sprinkle a few cookie crumbs on top, also.
Bake 340℉ for 15-17 minutes. Cool

Peanut Butter Icing:
Mix well by hand.
Put into ziplock bag, which very small corner cut to allow you to decorate cupcake with icing.
Drizzle caramel ice cream topping on, if desired
